Let’s be real—university life is busy. Between academics, extracurriculars, and social events, cooking is often left on the back burner. But what if I told you that you could make a delicious, and nutritious meal in just 15 minutes?
What You’ll Need (Serves 1-2)
● 1 block of feta cheese
● Pasta of your choice (I love gnocchi or fusilli)
● 1 cup of cherry tomatoes
● 1 cup of spinach
● 1 tbsp of olive oil
● A pinch of black pepper
Directions
Boil the pasta.
In a separate pan, heat up some olive oil on low. Toss in your cherry tomatoes and let them cook until they’re soft and easy to squish. Add in your feta and spinach.
Mix together until the spinach wilts and the sauce is creamy.
Season with black pepper, and toss in your cooked pasta. Stir until everything is coated.
